Easiest Eggiest Breakfast Ever.
1. Pick your favorite veggies.
2. Fill cut veggies in (greased) muffin pan.
3. Pour whisked eggs over (with your choice of favorite spices of course :) )
4. Bake at 400 degrees for 20 minutes!

Dinner last night.. Paleo chicken pot pie bake! It was a hit :)
Spicy Cabbage Chicken Curry! Yumyumyum. Quick and simple :)
Ingredients:
1/2 Yellow Onion
2 Cloves Garlic
1/2 c Celery
1 1/2 c Cabbage
1 can Fire Roasted Toatoes
Splash Coconut Milk
2 tsp Red Curry Paste
2 tsp Curry Powder
2 tsp Salt
2 tsp Pepper
1 tsp Cayenne Pepper
1 lb Ground Chicken
Add first 3 ingredients in hot pan with 1 tbsp sesame oil. Cook until onions translucent and add cabbage, 1 tsp salt pepper cayenne curry paste and powder. Stir and cook 5 minutes. In another pan brown chicken and add 1 tsp salt pepper curry paste and powder. Add fire roasted tomatoes and coconut milk to cabbage mixture simmer for 3 minutes. After meat browned add to cabbage mixture and simmer an additional 3 minutes. Eat and enjoy!

once again, PaleOMG supplies me with another bomb recipe. last night i made her tomato cream chicken sausage “pasta”. delish and easy as pie! mmm pie. i kinda miss pie.

“spaghetti” with fiery meat sauce
ingredients:
1 spaghetti squash
olive oil
2 cloves garlic
1/2 onion
1 can organic tomato sauce
1 can fire roasted tomatoes
1/2 lb ground turkey breast
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp salt
1 tsp red chili pepper flakes
1 tbsp fresh basil, chopped
directions:
slice squash lengthwise and bake face-down at 400 degrees F for 30 minutes
heat 2 tbsp olive oil in a large cast iron pan on medium high
dice onions and garlic and cook in pan till translucent
add turkey and spices, cooking until browned
add half can of tomatoes and sauce simmer on low for 10-15 minutes
shred squash with fork and top with sauce!

okay. I admit I was feeling a little lazy after my workout last night, not so much like cooking. BUT that does not mean I will accept eating a lame dinner! in plaeo terms, a lame dinner usually amounts to some form of salad, eggs, random proteins, and/or copious spoonfuls of almond butter. (okay. maybe that’s just me.) so I surveyed the fridge, ending up with this little gem of a dinner!
twice baked cinnamon-honey-walnut-coconut sweet potatoes: refined sugar/ dairy free. paleo approved :)
ingredients:
2 baked sweet potatoes
1/3 cup coconut milk
2 tbsp raw honey
1 tbsp maple syrup
1 tsp cinnamon
1/8 tsp nutmeg
1/4 cup walnuts, chopped
shredded unsweetened coconut (optional)
directions:
inhale that heavenly aroma, top with coconut if so desired, and consume!
