Spicy Cabbage Chicken Curry! Yumyumyum. Quick and simple :)
Ingredients:
1/2 Yellow Onion
2 Cloves Garlic
1/2 c Celery
1 1/2 c Cabbage
1 can Fire Roasted Toatoes
Splash Coconut Milk
2 tsp Red Curry Paste
2 tsp Curry Powder
2 tsp Salt
2 tsp Pepper
1 tsp Cayenne Pepper
1 lb Ground Chicken
Add first 3 ingredients in hot pan with 1 tbsp sesame oil. Cook until onions translucent and add cabbage, 1 tsp salt pepper cayenne curry paste and powder. Stir and cook 5 minutes. In another pan brown chicken and add 1 tsp salt pepper curry paste and powder. Add fire roasted tomatoes and coconut milk to cabbage mixture simmer for 3 minutes. After meat browned add to cabbage mixture and simmer an additional 3 minutes. Eat and enjoy!
Blueberry Chai Muffins. Paleo, stupid good, and totally worth the wrestle (and later mess) with my food processor. I owe it all to PaleOMG (typical, right?) a must try if you like Chai! (and my corny rhymes.) mmmmmmm :)
once again, PaleOMG supplies me with another bomb recipe. last night i made her tomato cream chicken sausage “pasta”. delish and easy as pie! mmm pie. i kinda miss pie.

“spaghetti” with fiery meat sauce
ingredients:
1 spaghetti squash
olive oil
2 cloves garlic
1/2 onion
1 can organic tomato sauce
1 can fire roasted tomatoes
1/2 lb ground turkey breast
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp salt
1 tsp red chili pepper flakes
1 tbsp fresh basil, chopped
directions:
slice squash lengthwise and bake face-down at 400 degrees F for 30 minutes
heat 2 tbsp olive oil in a large cast iron pan on medium high
dice onions and garlic and cook in pan till translucent
add turkey and spices, cooking until browned
add half can of tomatoes and sauce simmer on low for 10-15 minutes
shred squash with fork and top with sauce!
spicy superfood scramble
fast and so good!

tbsp olive oil
clove garlic
1/4 onion
1/4 red pepper
1 raw turkey burger
3/4 cup chopped kale
1/2 baked sweet potato
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp cayenne pepper (or more!)
directions:
heat olive oil in a large skillet
add next three ingredients, till onion translucent
add burger, crumbling with wooden spoon
add spices and cubed sweet potato
cook until turkey browned!
pancakes for dinner?
yes. my love for breakfast sometimes swings over to the p.m. as well. last night i made the food lovers kitchen’s almond flour pancakes and topped it with some pure maple syrup and blueberries! they were delish. if only i would have had some sausage…

wishing i was posting pictures of delicious food; however, the only pictures i would have been able to take lately are ones of my bedroom wall. being paleo is tough when you’re under the weather! choking down a banana is about the best i could do..
